     We now carry farmstead cheeses made from 100% organic milk from grassfed swiss cattle with old-world cheese cultures. The cheeses are raw milk cheese aged over 60 days.

     Cheese is the storage form of milk, but more concentrated and nutritious. Great cheese starts with the best quality milk. Windsor Dairy takes their milk straight from the cow to the cheese vat while it is still warm, and innouclates it with organisms (imported from Europe) similar to those that make yogurt. After the organisms turn the lactose into lactic acid, they add natural calf rennet to form a custard. This is cut with a cheese harp to separate the curds and whey. The curds are scooped into cheese hoops and pressed to make 20 lb. wheels. Some cheeses are coated with a breatheable skin made of casein from whey. Others are allowed and encouraged to form a natural rind with the growth of cheese-loving molds that enhance the flavor further.

     Advantages over commercial cheeses?  All Windsor cheeses are alive and Certified Organic. The cows are entirely grassfed, so the cheese contains much more CLA and omega-3 fatty acids (see the website, listed below, for slide presentations on both of these stellar nutrients.) And the taste is outstanding!

     Serving and storage tips: The full flavor of cheese is best achieved by allowing it to reach room temperature. Cut pieces of cheese should be eaten within a week, but will last up to 2 weeks in the 'fridge if you wrap them in wet cloth and foil. If you keep them longer, cut away any mold, or if it dries out, use the hard cheese for grating.

Types we offer:

    Jack (McIntyre)- The mildness of the jack cheese cultures showcase the superior flavor and texture of our raw, grass-fed, organic milk. Our Jack has a mild, creamy flavor and a deilcious texture. There is a "spring" to its bite. This cheese has a broad appeal. Excellent to serve to anyone who fears "smelly" cheese, our Jack is also a great all around cooking cheese to use in American or Mexican dishes, or anywhere a milder cheese is preferred. 

    Cheddar (Nahku) - Our version of cheddar cheese has a medium-sharp flavor with a slightly dry and crumbly texture. A favorite with kids at the farmers market, this cheese is perfect for snacking, sandwiches and classic Mac-n-Cheese.

     Ementhal (Colona) - Cultures imported from Switzerland bring out the natural sweetness in our raw, grass-fed, organic milk from our Brown Swiss cows. Colona has an Ementhal-like flavor and the little "holes" or air pockets of the famous "Swiss Cheee."  Colona is great served alongside toast and jam for breakfast and is perfect to serve on a cheesse and fruit plate accompanied by wine.
